Stale bread soup is one easy way to reduce food waste and at the same time prepare a delicious meal. Taste wise it reminds of a mushroom crème sauce and can also be used as a sauce if less water is added.

Ingredients:
200g of stale bread
80g butter
2 onions
2l vegetable broth
2dl of cream
Salt, pepper and lemon juice
Procedure:
Start by cutting the stale bread into cubes and chopping the onions.
Add the butter into a pot and roast the onions and the bread cubes when the pan starts to warm up.
Pour the vegetable broth into the pot and let the it simmer for about 20 minutes
Mix the mixture thoroughly with a whisk or a mixer.
Add salt, pepper and lemon juice to taste.
