Transforming a somewhat boring vegetable into a stunning Leek Mosaic is easier than you might think! This dish combines the fresh taste of leeks with the rich umami flavor of nori leaves. Simply layer the leeks and nori leaves to create a beautiful mosaic pattern that will impress your guests or your date ;) It's a perfect choice for those who appreciate creative and plant-based cuisine.

Ingredients:
2 medium leeks
4-6 nori seaweed sheets (depending on the size of your leeks)
Plastic film or cling wrap
Salt, to taste
Optional: Olive oil for brushing
Procedure:
Prepare the leeks:
Trim the roots and the dark green tops of the leeks, leaving the white and light green parts.
Slice the leeks lengthwise in half to make it easier to cook.
Cook the leeks:
Bring a pot of salted water to a boil and gently cook the leeks for 10-15 minutes until tender but not falling apart.
Drain the leeks and let them cool slightly.
Roll the leeks in nori:
Lay the nori sheets flat on a clean surface.
Take the cooked leeks and place them on the nori sheets. Roll each leek piece tightly in the nori.
Form the mosaic:
Combine the individual nori-rolled leeks to form a bundle.
Place the bundle on a larger nori sheet and roll it again to create a tight cylinder.
Compact the roll:
Wrap the entire roll tightly in plastic film or cling wrap to compress it.
Twist the ends to form a balloon-like shape. This step ensures that the roll is compact and holds its shape.
Refrigerate for at least 30 minutes to allow the roll to set.
Slice and serve:
Once chilled, remove the plastic film and slice the leek mosaic into 1-2 cm thick pieces.
Serve the slices as part of an appetizer platter or alongside your favorite dipping sauce.
